Marinated Vegetables
 
 
I've used combinations of the following vegetables: cauliflower, broccoli, mushrooms, carrots, celery, cherry tomatoes, radishes, peppers, sugar snap peas, artichoke hearts, black olives, cucumber.

  • 1 cup apple cider vinegar
  • ½ cup canola oil
  • 1 tablespoon dried dill weed
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 8 cups of assorted fresh vegetables
Instructions
  1. To make the dressing, whisk together the 1st 6 ingredients. Or place the 1st 6 ingredients in a jar with a lid and shake the jar to combine.
  2. Place the assorted in a large bowl and pour the dressing over the vegetables. Let marinate at least 1 hour before serving.
