Chopped Greek Salad

This colorful and refreshing salad is easy to make. Just requires tossing together some chopped fresh vegetables in a simple Greek vinaigrette dressing.

  • Salad
  • 1 head romaine lettuce, sliced in ½ inch slices
  • 1 medium tomato, diced or cut into wedges, may substitute a handful of cherry tomatoes, halved
  • ½ English cucumber, quartered and cut into ½ inch pieces
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • ½ cup pickled red onions, may substitute ¼ cup diced red onions
  • ½ cup kalamata olives
  • ½ cup feta cheese, crumbled
  • Dressing
  • ½ cup good quality olive oil
  • ¼ cup red wine vinegar
  • 2 cloves garlic, minced
  • ½ teaspoon dried oregano
  • salt & pepper to taste
  1. Combine all the ingredients for the salad except the feta in a large bowl.
  2. Combine all the ingredients for the dressing in a jar and shake to mix
  3. Pour dressing over salad and toss to coat. Top with feta and gently mix into salad.
