Grandma’s 7-up Lemon Cake

April 30, 2014 By Angie Trusty

This recipe is from my Grandma Honey’s recipe book. She made the cake in the picture Thanksgiving 2013 and I served it on antique glass plates from her China cabinet. This cake is moist and delicious!

Grandma’s Lemon 7-up Glazed Cake

Cake
1 (18.25 ounce) box of white cake mix
1 (3.4 ounce) package instant lemon pudding mix
3 eggs
¾ cup vegetable oil
1 ¼ cup (10 ounces) 7-up

Preheat oven to 350. In a large mixing bowl, combine all ingredients. On medium speed, mix all ingredients until well combined. Pour mixture into a greased 13 x 9 pan. Bake for 35 minutes.

Glaze
1 ½ cup powdered sugar
2 tablespoons lemon juice
2 tablespoons hot water
Stir all ingredients together until sugar is dissolved. Pour glaze over cake while the cake is still warm.
