Cauliflower confetti salad

A delicately crisp, raw cauliflower salad with a bright punch of colors from peppers, green onions, capers and olives. Crumbles of salty feta cheese are little flavor bombs which make this salad over the top delicious. This simple salad is easy to prepare. It’s perfect on it’s own for a light lunch or great served with chicken, pork or beef. Make it ahead of time and this will be a crowd pleaser to the summer cookouts.

Cauliflower Confetti Salad

A delicately crisp raw cauliflower salad with bright punch of colors from peppers, green onions, capers and olives. This delicious make ahead salad will last for several days in the refrigerator.

Ingredients

Scale

4 cups raw cauliflower, petite diced or riced

1 cup crumbled feta cheese

1/2 cup thinly sliced green onions (white & green parts)

1/2 cup black olives, chopped

1/4 cup capers, rinsed & drained

1/2 cup peppadew peppers, chopped

1/2 cup olive oil

1/4 cup sherry vinegar

1/2 teaspoon granulated garlic

salt & pepper to taste

Instructions

Stir together all ingredients in a large bowl.  Cover & refrigerate for 30 minutes or preferable overnight before serving.
