Shaved Brussels Sprouts Salad

Raw Brussels sprouts have a crisp texture and fresh flavor.  I wasn’t a fan of Brussels sprouts until I tried preparing them raw.  Even non-Brussels sprouts will love this salad.  The key is slicing or shaving the Brussels sprouts as thinly as possible.

Holding the Brussels sprouts by the stem end, use a mandolin, slicer or knife, shave as thinly as possible.  Disregard the ends.

Combine Brussels sprouts, red onion, parmesan cheese in a large bowl.

Whisk together olive oil, lemon juice, Dijon mustard, salt and pepper.  Pour dressing over Brussels sprouts and stir to combine.  Let the salad marinate about 15 minutes before serving.
